I’m feeling super organized today… it’s only Saturday night, and I have next week’s menu planned already. (That’s mostly because we went grocery shopping today!)
Sunday 5/6 – Roasted Squash Soup (We have one more butternut squash to use up, and I’ve recently discovered the time bake setting on my oven. I’ll roast the squash while we’re at church and throw the rest of the soup together once we get home.)
Monday 5/7 – Shrimp and Cheese Quesadillas
Tuesday 5/8 – Dinner date out! Woot woot!
Wednesday 5/9 – Apricot Chicken Pasta, Roasted Broccoli and Cauliflower
Thursday 5/10 – Bacon and Egg Sandwiches (I’ll be attending a baby shower that night, so we need something quick and easy!)
Friday 5/11 – Hello weekend! We’ll have burgers on the grill, fries and veggies of some kind.
It should be a good week. 🙂
